Paleo Breakfast Casserole

1 lb. pork sausage, browned and drained
10 eggs, lightly beaten
4 green onions, chopped
1 tsp. sea salt
1 tsp. black pepper
1 tsp. ground mustard
1 Tbsp. minced onion
1/2 (10 oz.) package frozen spinach, thawed and thoroughly drained (optional)
4 slices bacon, cooked and crumbled

Preheat oven to 350 degrees. Mix all ingredients together except for bacon. Pour into greased 8×8 baking dish and sprinkle crumbled bacon on top. Bake at 350 degrees for 50-60 minutes or until eggs are set.

This can be prepared and refrigerated a day in advance and then baked the next morning.
